Lemon Cupcakes :)

I usually go for chocolate desserts, but randomly I get cravings for LEMON.

For the cupcakes: (24 -30 cupcakes)

  1. Preheat the oven to 350 degrees. Line two 12-cup cupcake tins with liners (I used 1 12-cup and 2 6-cup so I could fit them all in my oven at once).
  2. Whisk 2 3/4 cup cake flour, 2 teaspoons baking powder, and 3/4 teaspoon salt.
  3. In a large bowl beat 2 sticks unsalted butter(softened) and 1 3/4 cup sugar with an electric mixer on medium speed until light and fluffy. Then beat in 4 eggs (room temp) 1 at a time. Add 1 tablespoon vanilla, 2 tablespoons lemon juice, and 2 tablespoons lemon zest.
  4. Measure out 1 1/2 cups whole milk.Reduce the mixing speed to low and beat in 1/3 flour mixture then alternating between flour and milk until just incorporated.
  5. Give the batter a stir with a spoon, then fill cupcake tins 2/3rds full (about 1/4 cup). Bake for 15-20 minutes, or until tooth pick comes out clean.

For Frosting I used BunnyWomen Butter cream (THE BEST) but used half water/half lemon juice and added 2 tablespoons lemon zest.

I topped my cupcakes with yellow sprinkles and TA-DAH yum.
